Marinated Feta – easy recipe!
makes one 250ml jar
Few springs of fresh thyme (or a tsp of dried)
Few leaves of fresh basil (or a tsp of dried)
Small slice of lemon peel, pith removed
1 clove garlic, finely sliced
5, or so peppercorns
4 oz feta cheese (approx 115g) cut into cubes or chunks
½ -3/4 cup organic olive oil (enough to completely cover cheese)
Arrange fresh herbs, lemon, garlic, peppercorns and cheese in layers in a mason jar. Completely cover with olive oil. Allow to marinate for at least 3 days. Cheese will be good in the fridge for about 3 months.
