This is a stove top, dairy-free version made with short grain brown rice. It is a nice treat for breakfast or dessert. Whilst it is difficult to get that real creamy texture with the brown rice, you can count on it being filled with fiber and better nutrients. No need to justify having this for breakfast, sometimes we need something warm and sweet – much better than sugary oatmeal.
5 Servings @0.70/Serving
- 3/4 cup water
- 3/4 cup short grain brown rice
- 1/2 can coconut milk
- 1 tsp. Sugar
- 1/4 cup raisins
- 2 pears
- 1/2 tsp cinnamon
- A dash of clove powder
- 1Tbsp honey
- 1Tbsp coconut oil (optional)
Rinse the rice under cold water and add to a medium pot. Add the water, bring to a boil, cover with a lid and set to lowest temperature. Let simmer for 15 minutes. Dice the pears and add to the rice following with the coconut milk, sugar, raisins and spices.
Give it a quick stir, put the lid back on and gently simmer on low for 35 minutes or until almost all of the liquid has absorbed. Add the honey and coconut oil, give it a quick stir, cover with lid and let sit for another 5-10 minutes. Let the sweet smell of the fresh pears fill your home as the rice pudding bubbles on the stove top! Mmhh…
What makes this dish so budget?! You most likely have many of the ingredients at home already. If you don’t then you’re still looking at serving 5 people breakfast for $3.50!
What makes this dish so gourmet?! It’s a twist on the real deal with it being dairy free, using brown rice and coconut milk. The fresh pear just puts the cherry on the pie- errr; the sweetness in your tummy.
