- 2 tbsp. finely minced shallot
- 2 tbsp. dry coconut
- 6 cups ripe mango, peeled and chopped finely
- ½ cup minced celery
- 2 tbsp. fresh lime juice
- 1 medium clove garlic, minced
- 1/2 tsp salt
- 2 tbsp. fresh cilantro
- Fresh minced jalapeno or other hot pepper to taste.
- Combine all ingredients and mix gently.
- Cover tightly and refrigerate.
