Raw Cashew Chia Pudding

Cashew Chia Pudding

  • 1/4 c chia seeds
  • 3 c filtered water
  • 1/4 tsp sea salt
  • 1/4 c raw hazelnuts
  • 3/4 c raw cashews
  • 1/2 tsp pure vanilla extract
  • 2 tbsp raw honey
  • 1/2 tsp cinnamon (or ¼ tsp cinnamon and ¼ tsp cardamom powder for a chai inspired pudding)

The How To:

  1. Purée all ingredients together in blender (except chia seeds) and make as smooth as possible.
  2. Pour into a 1L mason jar, add chia seeds, secure with a tight fitting lid and shake very well.
  3. Refrigerate at least 1 hour.
  4. Pour into 2 glass pudding cups and top with fresh berries
