Lara and Adrian are professional chefs who delight in helping you bring delicious, healthy foods into your home. From Scratch – A Mountain Kitchen is a bustling market bistro and catering company in Fairmont Hot Springs, and their grocery line of frozen entrees, condiments and spice mixes was born out of requests by bistro patrons. Lara and Adrian are passionate about the flavour and value of local food, utilizing ingredients from many local growers.

What do you grow or make?

We make a line of delicious condiments that were created by our bistro customer’s requests:

  • Chocolate Rhubarb Raspberry Spread
  • Strawberry Rhubarb Mint Spread
  • Wholegrain Dijon Mustard
  • Red Hot Tomato Spread
  • From Scratch Salad Vinaigrette
  • Maple BBQ Sauce

Then came the spice blends:

Now we are moving into frozen meals as we discovered that our customers want to take us home.  We are starting with Elk Pie and Wild BC Salmon Fishcakes with a plan to launch more of our popular dishes in months to come.

How would you describe your company?

We have a market bistro and catering  company in the beautiful and tiny community of Fairmont Hot Springs .  As we like to say, ‘we live in the sticks but our food really kicks!’ The From Scratch retail line philosophy is to offer an eclectic, tasty, attractive line of food products that become a ‘must have’ in the average home pantry.

We love what we do for a living and every dish we make is made with best intentions to give you the energy, satisfaction and fulfillment you desire in a meal.  We believe that food is medicine as we carefully source the best quality ingredients we can get our hands on.

From Scratch supports local producers by purchasing ingredients that promote freshness and seasonal product as much as possible. Local would be defined as first looking to the Columbia Valley, then to British Columbia and Alberta. We source non-GMO and support organic where we can, as we feel that organic food has tremendous flavour. As well, a seasonal food focus gives us the best flavour when it’s at its peak and gives variety to returning customers.

How long have you been in business?

Our bistro, From Scratch – A Mountain Kitchen, has been operating for seven years.  The idea for this business came 8 years ago selling homemade food products at a local Farmer’s Market. We have just launched our retail line this year!

What motivated you to start?

As a family with young children, we realized that there was a lack of fresh, delicious meals in our valley.  With much research and heart, we took the plunge setting ourselves up in Fairmont Hot Springs knowing that the market bistro alone would not sustain the operation.  Setting up in Farmer’s Markets in the valley, we promoted our food line to see what customers out there really wanted.  Moving forward, we choose our current condiment line based on three years of feedback and now the frozen food line is another response to our customers requests.  In many ways you can say we are going with the flow with our best intentions to help our customers serve great meals to their families.

What are some of your greatest joys?

First and foremost, our children:  2 out of 3 of them help out in our operation to date where they are learning why its important to work from your heart and to love what you do.  After that, business wise, we love seeing our customers return year after year, watching their kids grow up and sharing their life stories with us.

We also love harvest season in the valley that allows us to prepare ingredients at their peak.  There is nothing better than sharing those first crop tomatoes or strawberries from the garden with the people who support us that allows us to live where we do.

As business owners, it’s a real achievement to look around at your business in full swing and see genuine enjoyment of people’s faces from our staff to the customers.  We love it when someone tastes something for the first time that we have made and their faces light up!

On a more personal note, we love waking up to the mountains every morning!

What are some of your greatest challenges?

Like most small business owners, the life of an entrepreneur is 24/7.  Seeking that balance of family and work time is more difficult in the peak months when the kids are off school.  Just getting enough rest in general is difficult.  This past year we have been very fortunate with our staffing situation, but there have been years that it has been wearing.  At this very moment, we are in the threshold of expanding our kitchen operation but our market bistro business has increased significantly, leaving little time to construction and planning.  At the end of the day, it’s not enough hours in the day to keep up with all the demands.

What is your vision for your company?

As we get older and the restaurant industry changes in the coming years, we envision our business becoming primarily a food production business.  The market bistro will remain seasonal, hosting more cooking classes and special events, while we continue to develop our food line.  We hope that From Scratch will become a household name known for delicious, quality food items that enhances at-home meals whether it’s for a single person or a family.
