Mushroom Miso Gravy

Ingredients

  • Olive Oil
  • ¼ cup diced onion
  • 1 cup thinly sliced mushrooms
  • 1 stalk celery, finely diced
  • 1 carrot, finely diced

For the Gravy:

  • 1/3 cup unbleached flour
  • ¼ cup nutritional yeast
  • 1 tsp salt
  • ½ tsp dill weed and basil
  • pinch thyme
  • 1 ½ cups water
  • 2 tbsp. light miso.

Method

  1. Gently simmer sauté with a little Olive Oil the onion, mushrooms, celery,  carrot.
  2. Mix together the gravy ingredients in a jar with a lid, shake well.
  3. Add to the cooked vegetables and stir, on medium heat until thickened, about 5 minutes.
  4. Remove from heat and stir in the miso.
