West Coast Veggie Pate

Ingredients

Part 1:

  • 1/2 cup ground toasted sunflower seeds
  • 1/4 cup ground brazil nuts
  • 1/3 cup whole wheat flour
  • 1/3 cup nutritional yeast
  • 1/4 tsp thyme
  • 1 tsp basil
  • pinch sage
  • pinch cloves
  • 1/2 tsp salt
  • 1/4 tsp chilli powder

Part 2:

  • 1 cup grated potatoes
  • 1 cup water
  • 2 tbsp lemon juice
  • 1 cup minced leeks
  • 2 tbsp olive oil (opt.)

Method

  1. In a large bowl combine the first part of ingredients.
  2. Stir well and add the second part of ingredients.
  3. Spread evenly into an oven proof pate dish and cover with a lid or tin foil, bake at 350 °F for about 1 hour covered and then for 1/2 an hour, uncovered until browned and done.
  4. Cool before serving.
